Queso Fundido


  • 1 pouch Cuisine Solutions Vegan Chili
  • 8 oz Chihuahua cheese (or Monterey Jack)
  • 8 oz Oaxaca cheese (or Mozzarella)
  • 2 roasted poblano chiles (or bell peppers)
  • 4 oz cilantro
  • 1 white onion, diced
  • Tortilla chips
  • Tequila


  1. Preheat oven with a cazuela, ramekin, or other shallow oven-safe dish inside to 375ºF, and warm chili in a sauce pan on the stovetop.
  2. Spoon or ladle warm chili into hot cazuela about halfway up the side.
  3. Add cheese mix on top of chili and return to oven for 5 -10 minutes until cheese is melted and starting to brown.
  4. Remove from oven and serve.
