Quinoa Chicken Tabouleh

  • 2 Cups of Quinoa (Cuisine Solutions)
  • 4 Chicken Breasts, Sliced (Cuisine Solutions)
  • 1 Cup of Parsley, Chopped
  • 1 Cup of Kale, Chopped
  • ½ Cup of Tomatoes, Diced
  • ¼ Cup Red Onion, Diced
  • ½ Cup Red Pepper, Diced
  • ½ Cup Yellow Pepper, Diced
  • ½ Cup Cucumber, Diced
  • ¼ Cup of Fresh Pomegranate Seeds
  • ¼ Cup of Olive Oil, Extra Virgin
  • 1 Tbsp. of Fresh Lemon Juice
  • Salt and Pepper to taste

Directions Serves 4

  1. In a mixing bowl, combine the olive oil and the lemon juice and whisk until it starts emulsifying, season with salt and pepper to taste.
  2. In a bigger bowl, combine the rest of the ingredients, except the chicken, lemon, salt, and pepper.
  3. Dress with the lemon juice and season with salt and pepper if needed.
  4. Place sliced chicken breast on top of the individual portions and serve.
