Salmon and Quinoa Power Bowl

  • 4 Pieces of Salmon (Cuisine Solutions)
  • 2 Cups of Quinoa (Cuisine Solutions)
  • 2 Hard Boiled Eggs, Cut into Quarters
  • 1 Avocado (a quarter of sliced avocado per bowl)
  • 1 Cup of Black Beans
  • 1 Cup of Spinach, Chopped
  • 1 Cup of Roasted Sweet Potato

For lemon dressing:

  • 3 Tbsp. of Extra Virgin Olive Oil
  • 1 Tbsp. of Lemon Juice
  • 1 tsp. of Salt
  • 1/8 tsp. of Dijon Mustard
  • Dash of Black Pepper

Directions Serves 4

  1. In a hot pan with butter, flash sear the salmon for 30 seconds per side, just enough to get some color and let it rest.
  2. In a mixing bowl, combine all the lemon dressing ingredients and whisk rigorously until fully mixed. Dress the quinoa with the dressing, reserving a small amount.
  3. Place the quinoa in the bottom of a bowl, and then line up the rest of the ingredients in the bowl. Make sure the ingredients are split evenly between all the bowls when serving. Finish with a little drizzle of dressing over the top of each portion.
